a sweet treat for the new year


A lot of us minimize sugar in general, and many of us are pushing for it in the new year (resolutions, new year’s goals, whatever you wish to call it).

I shared a simple recipe with my students last quarter that I’ve found on a few web sites. I don’t remember the exact sites — so I can’t give credit. It’s a great sweet treat or dessert. Your ratios on ingredients may vary.

Chocolate/PB/banana “pudding”

You will need:
1 banana, on the riper side
1-2 tbsp natural salted peanut butter
1+ tsp cocoa powder

1. Peel the banana and put it in a bowl. Mash it up with a fork (you can also use a blender if you care to make it super-smooth. I don’t think it’s worth that effort, and I’m fine with a few small banana chunks.)
2. Mix in both the PB and the cocoa powder until well incorporated. Start with the lower amounts of each, and add more if you want a stronger flavor of either.
3. Eat! 🙂

No refined or added sugars! Good stuff, eh? Simple and cheap.
